Rainbow Smoothie Bowl

Who would've thought something so vibrant looking could be so easy to chuck together?

I've always been one to avoid jumping onto bandwagons, and often by the time I try whatever it is, I'm kicking myself for not doing so earlier! The smoothie bowl phenomenon is no exception.

Keeping the base simple is an easy way to keep it looking bright and fresh, and then you can add your other ingredients as toppings to really show the contrast. If it looks good, you'll want to eat it!

1 handful of baby spinach

150ml coconut water

1/2 banana

1 mango cheek

3 Tbsp Co-Yo (or other yoghurt)

1/4 tsp maca powder

Blend and pour into bowl - if it's too runny, add some more Co-Yo.

Top with:

Fresh/freeze dried pomegranate seeds

Chia seeds

Bee pollen

Cacao nibs

Blueberries

Cinnamon

Or whatever else will make it look colourful and delicious while making it nutritious!
